Oxygen absorbers
- Prevent oxidation and spoilage. They are used for products with low moisture content (<10%) such as rice, beans and flour, but not for sugar or salt.
- When oxygen absorbers are used in humid environments, anaerobic (oxygen-free) bacterial growth may occur, such as Clostridium botulinum, which can cause botulism .
- Products with a high fat content can become rancid if the oxygen absorber does not work properly.
- Oxygen absorbers eliminate oxygen but do not provide protection against other spoilage organisms such as mold or bacteria if spores are already present.
NB!
- To prevent botulism, do not use oxygen absorbers on moist products or in moist environments.
- Sugar and salt should never be stored with oxygen absorbers as this will cause hardening.
